Corn Salad {Food}

Today I am sharing with you a recipe that I kind of made up based on something I ate recently. My hubby and Grandmother liked the salad too, so while I was eating my second (gulp) helping of this, I did some detective work to figure out what was in it. Of course, I do not know exactly what they used, but hubby thinks this is pretty darn close to what we had!



I started with a can of corn, drained, and poured into a bowl.




Next, I diced up some red pepper (you can use green or yellow pepper too) to be about the same size as the corn and added that to the bowl. I used about half of a red pepper, but you can use as much or as little as you want.



Then I diced up some red onion the same size and added that. On top of those items, I crushed up some Frito chips and then added about 1/4 cup of mayo and 1/2 cup of shredded cheddar cheese.



Mix all of this together, season with salt and pepper to taste. It seems to taste better if it sits for awhile, so you can wait to add the crushed corn chips until you are ready to serve to keep them nice and crunchy!
